Carne de Porco a Alentejana | Recipe

Today we’re sharing the recipe for Carne de Porco a Alentejana.

INGREDIENTS:

  • 4 cloves of garlic
  • 600gr diced pork loin
  • 2 tablespoons paprika paste
  • 2 tablespoons lard
  • 1 glass of white wine
  • 1kg Potatoes for frying
  • Oil to taste for frying
  • 500gr Clams
  • Fresh coriander to taste
  • Olives to taste
  • Salt to taste

PREPARATION:

Start by crushing the garlic cloves with coarse salt in a mortar.

Season the meat with the garlic paste and then add the paprika paste. Leave to marinate overnight.

Heat the lard in a pan and fry the meat until golden brown or to your liking. Then pour in the white wine and leave to evaporate.

Peel and dice the potatoes, rinse in water and cook for about 12 minutes. Drain and dry well.

Heat the oil and fry the potatoes until golden brown.

Meanwhile, add the clams to the meat and let them open.

Serve the meat with the potatoes and sprinkle with chopped coriander.
