Alentejo gazpacho

Gaspacho Alentejano is one of the typical dishes of the Alentejo region. It’s a fresh dish to serve on hot days and an excellent idea to start a lunch with friends.

Ingredients:

  • 3 cloves of garlic
  • 1 tablespoon salt
  • 400gr Tomato Chucha
  • 2 tablespoons olive oil
  • 2 tablespoons vinegar
  • 1 tablespoon oregano
  • 150gr Green bell pepper
  • 150gr Cucumber
  • 1,5lt Water
  • 150gr Alentejo bread
  • Coriander to taste
  • Pepper to taste

Preparation:

Start by peeling the garlic cloves and chopping them finely.

Then wash the peppers, remove the seeds and the inner white part, and cut them into small cubes.

Then wash the cucumber and cut it into small cubes.

Then place the garlic, bell pepper and cucumber in a bowl and season with salt, olive oil, vinegar and oregano. Finally, add very cold or even iced water.

Finally, add a few pieces of Alentejo bread to the bowl and season your gazpacho with pepper and chopped coriander.
