If there’s one traditional dish, it’s stew. And a traditional Alentejo recipe is chickpea stew with pumpkin.
The recipe:
Ingredients:
- 400gr Chispe
- 1 Farinheira
- 1 black pudding
- 1 sausage
- 200gr Elbow Pasta
- 400gr Cooked Chickpeas
- 400gr pumpkin
- 2 carrots
- 1 onion
- 3 cloves of garlic
- 2 tablespoons olive oil
- Mint to taste
- Salt and pepper to taste
Preparation:
Start by cooking the sausages and chispe in water seasoned with salt, then drain and set aside. Reserve the water from cooking the meat.
Next, peel the onion and garlic, chop them and put them in a pan with olive oil until golden.
Cut the carrots and pumpkin into small pieces and add them to the previous stew. Drizzle with the water from cooking the meat and cook for about 15 minutes.
Cut the sausages and chispe into small pieces and add to the previous mixture in the pan. As well as cooked and drained pasta and chickpeas.
At the end, add the mint, adjust the seasoning and serve.
