Wild asparagus is a typical Alentejo food. And if you add eggs, it’s the perfect combination. So today, we’re going to give you the recipe for an asparagus omelette.
The recipe:
Ingredients:
- 1 bay leaf
- 1 Asparagus sauce
- 2 cloves of garlic
- 6 Eggs
- Olive oil to taste
- Salt and pepper to taste
Preparation:
Start by washing the asparagus and placing it in a pan of boiling water, seasoned with salt, and leave it there for a few minutes. At the end, remove them, drain them and cut them into small pieces.
Beat the eggs, seasoned with salt and pepper.
Put olive oil in a frying pan, along with the chopped garlic cloves and bay leaf. Let it brown a little.
Then add the asparagus so that it crisps up and gets a taste of the seasoning.
Add the eggs and stir well with a wooden spoon. You can add extra ingredients. Such as sausage, paio or ham, while adding the eggs.
Mix all the ingredients well until the eggs are cooked.
Serve immediately on the plate or with a few slices of bread.
