Today we’re sharing a recipe for Tomato Rice with Fried Fish.
𝗜𝗡𝗚𝗥𝗘𝗗𝗜𝗘𝗡𝗧𝗘𝗦:
- 4 Hake steaks
- 1 teaspoon garlic powder
- 1 teaspoon white pepper
- 1 Lemon (just the juice)
- Bread flour
- Frying oil
- 1 and a half cups of Carolino Rice
- 4 ripe tomatoes, peeled and seeded
- 1 clove of garlic
- 1 onion
- 1 bay leaf
- 3 tablespoons olive oil
- Water and salt to taste
- Chopped coriander
𝗣𝗥𝗘𝗣𝗔𝗥𝗔ÇÃ𝗢:
Start by seasoning the hake slices with salt, lemon, white pepper and garlic and leave to marinate for half an hour.
Put a pan on the heat with the chopped onion and olive oil and let it sauté a little, then add the chopped garlic and bay leaf. Then add the tomatoes and let them sauté. Add a little water, season with salt and simmer covered for 10 minutes.
Remove the bay leaf and add the rice, letting it absorb the liquid, and when it’s dry add 4 cups of water. Keep in mind that the cup measure must be the same as the one used for the rice, and when it starts to boil, stir it, put it on a white heat and let it cook for about 10 minutes. Don’t let all the liquid be absorbed.
While the rice is cooking, prepare the hake. Dry well with absorbent paper and dust with flour. Fry it in hot oil and let it brown well on both sides, so that it is tender and not dry.
Serve the hake immediately, accompanied by the rice and sprinkle with a little chopped coriander.
