Farófias

Today we’re sharing the recipe for Farófias jam.

𝗜𝗡𝗚𝗥𝗘𝗗𝗜𝗘𝗡𝗧𝗘𝗦:

  • 5 dl milk
  • 5 clear
  • 3 yolks
  • 3 level tablespoons of flour
  • 3 tablespoons of sugar
  • 3 or 4 large strips of lemon peel
  • Cinnamon for sprinkling

𝗣𝗥𝗘𝗣𝗔𝗥𝗔ÇÃ𝗢:

Start by beating the egg whites.

Bring the milk and lemon zest to the boil, add a few spoonfuls of egg whites and cook for a minute. Remove and set aside on a platter.

Then start on the custard: pass the milk in which you boiled the egg whites through a sieve, let it cool and add the flour mixed with a little milk.

Bring to a simmer, stirring constantly until it thickens. Remove from the heat and add the beaten egg yolks and bring back to the boil.

After cooling, add the sugar, pour this cream over the farófias and sprinkle with cinnamon.
