Today we’re sharing the recipe for Carp with Alentejo-style Coriander Sauce.
𝗜𝗡𝗚𝗥𝗘𝗗𝗜𝗘𝗡𝗧𝗘𝗦:
- 1 Carp (1.5kg to 5kg)
- Potatoes for frying
- 1dl Olive oil
- 2 tablespoons vinegar
- 6 cloves of garlic
- 1 tablespoon oregano
- 1 handful chopped coriander
- Herbs provence to taste
- Salt and pepper to taste
𝗣𝗥𝗘𝗣𝗔𝗥𝗔ÇÃ𝗢:
Start by preparing the fish and then dry it thoroughly. For the seasoning: season with salt, pepper, garlic and herbs provence. Rub the spices well into the fish and leave to rest for about 30 minutes.
Prepare the grill for the fish and leave it in the coals for about 15 to 20 minutes, but don’t let it dry out too much.
Fry the potatoes for the side dish.
Next, use a frying pan and prepare the sauce for the fish. Add the garlic cloves, salt and a little olive oil and fry to your liking. Then add the vinegar and oregano and fry for a little longer. Turn off the heat and leave to cool, then add the rest of the olive oil and the coriander. Serve immediately.
