Today we’re sharing the recipe for Alentejo Gazpacho.
𝗜𝗡𝗚𝗥𝗘𝗗𝗜𝗘𝗡𝗧𝗘𝗦:
- 2 cloves of garlic
- Salt to taste
- 2 ripe tomatoes
- Olive oil to taste
- Vinegar to taste
- Oregano to taste
- 1 Cucumber
- Half a green bell pepper
- 1 small onion
- Water to taste
- 1 small loaf of Alentejo bread
𝗣𝗥𝗘𝗣𝗔𝗥𝗔ÇÃ𝗢:
Start by crushing the garlic cloves and salt in a mortar and set aside.
Blanch the skin of a tomato and remove the seeds. Add it to the mortar and pound until it forms a mush.
Place the previous mixture in the bottom of a tureen. Drizzle with a tablespoon of oil and a tablespoon of vinegar and sprinkle with oregano.
Cut the other tomato, cucumber, bell pepper and onion into small cubes. Add everything to the terrine.
Drizzle with iced water, the remaining oil and vinegar and serve with the diced bread. Sprinkle with oregano.
