Braised Black Pork Cheeks

Today we’re sharing the recipe for Braised Black Pork Cheeks.

INGREDIENTS:

  • 600gr Black pork cheeks
  • 75gr chopped onion
  • 50g chopped sausage
  • 50gr Chopped carrot
  • 50gr chopped celery
  • 50gr leek
  • 4 cloves of garlic
  • 25gr tomato pulp
  • 1 sprig of thyme
  • 1 bay leaf
  • 100ml Red wine
  • 200ml beef stock
  • Olive oil to taste
  • Salt to taste
  • Pepper to taste

PREPARATION:

Start by heating a little olive oil in a deep pan and searing the cheeks on all sides.

Remove the meat when it has caramelized and set aside.

To make the most of the meat’s juices, add the chorizo, carrot, onion, celery and leek cut into julienne and a sprig of thyme to the same pan.

Add the tomato pulp to give the sauce consistency, and sauté to lose some acidity. Add a bay leaf.

In a separate pan, boil red wine.

Add the meat to the sauce and add a little beef stock and the boiled wine.

When it starts to boil, cover the pan, lower the heat and simmer slowly for about 30 to 40 minutes.

Serve with a side dish of your choice.
