Alentejana Tomato Soup

Today we share the recipe for Alentejana Tomato Soup. It is important to note that depending on the area of Alentejo, there may be several versions of this recipe. So this is just one of them.

Ingredients:

  • 1.200kg Tomato
  • 1 Onion
  • 4 Cloves of Garlic
  • 1 Bay Leaf
  • Green Pepper
  • Oregano to taste
  • Tomato Paste
  • Salt to taste
  • Olive Oil to taste
  • 1 Portuguese Smoked Sausage
  • 1 Chorizo
  • Alentejo bread

Preparation:

Start by removing the skin from the tomato, and then cutting it into small pieces.

Place a pan on the fire, add a drizzle of olive oil, the onion, garlic, bay leaves and green pepper and let it sauté.

When sautéing, add the tomato and mix well. Cover and cook until the tomato starts to break down.

Add about 1L to 1.5L of water (it will depend on whether you want the soup to be thicker or not) and add tomato paste to taste to add color.

Season to taste with salt and add oregano to taste. Stir and let boil for 5 minutes.

Cut the bread into small slices.

Serve the soup with the bread.
