Today we share the recipe for Elvas Golden Bacalhau.
Ingredients:
- 300g Cooked and shredded cod
- 1 Onion
- 9 Eggs
- 300g Potatoes
- Olive Oil to taste
- Salt to taste
- Parsley or coriander to taste
- Olives to taste
Preparation:
Start by shredding the cod or you can use already shredded cod.
Peel the potatoes and cut them very thinly, like straw potatoes, and then fry them.
In another frying pan, add the olive oil and chopped onion, and when it is translucent, add the cod and mix well.
Then add the fries and mix everything well.
Separately, beat the eggs and season with salt, then add to the cod and mix well. It is important that the egg does not overcook, as we want the final dish to be very creamy.
Serve immediately and add chopped parsley or cilantro and olives on top.
