Ingredients:
- 1 kg of gizzards, cleaned and cut into small pieces
- 1 small onion
- 1 Bay Leaf
- 3 cloves garlic
- 1 generous drizzle of olive oil
- 1 glass of white wine
- 200ml tomato paste
- salt to taste
- pepper to taste
Preparation:
In a pan, pour a generous amount of olive oil and sauté the chopped onion, chopped garlic and bay leaves.
Then add the chopped gizzards and let it sauté a little.
Add the tomato paste, salt and pepper and bring to a boil.
Refresh with white wine and let it cook slowly over low heat until the gizzards are soft.
Halfway through the process, you can add a little water so you don’t run out of broth.
Finally, adjust the seasoning and serve this wonderful snack with Alentejo bread on the side.
