Favas Stews Alentejana

Ingredients:

  • 1,5kg Favas
  • 1 Chorizo
  • 1kg spare ribs cut into pieces
  • 1 black pudding
  • 1 onion
  • 4 cloves of garlic
  • 1 bunch of coriander
  • 1dl Olive oil
  • 1 glass of White Wine
  • 1 dessert spoon of Paprika
  • 1 tablespoon of Tomato Pulp
  • Salt to taste

Preparation:

Start by chopping the onion and garlic cloves. Place a drizzle of olive oil in a pan, add the chopped onion and garlic and let it sauté.


When it is sautéed, add the spare ribs cut into pieces and 1/3 of the chorizo ​​and let it braise.


Then add the tomato pulp, paprika, white wine and season with salt. Cover the pan and let it cook for 15 minutes.


Then add the black pudding and broad beans. And if necessary, add a little water until the beans are covered. Also add the remaining chorizo, but whole. Cover the pan and let it cook for the necessary time until the broad beans are tender.


When the broad beans are cooked, turn off the heat and sprinkle with chopped coriander. Cut the black pudding and chorizo ​​into pieces and serve immediately.
