Alentejo Fish Soup

Today we’re sharing a recipe for Alentejo Fish Soup.

INGREDIENTS:

  • 2 fish steaks to taste
  • Eggs
  • 100gr Flour
  • 1 chopped onion
  • 3 chopped garlic cloves
  • 1 bay leaf
  • 1 sprig of fresh mint
  • 2 tablespoons vinegar
  • 1 fish stock cube
  • 2dl Water
  • Olive oil qb
  • Salt to taste

PREPARATION:

Start by heating a pan with the olive oil, onion, garlic and bay leaf and let it brown.

Once the sautéing is complete, lower the heat, add the flour and stir constantly, while gradually adding the water.

Add the mint, the fish stock cube and season with salt to taste

When it starts to boil, add the fish, broken into large pieces, and cook for another 5 minutes.

Then break the eggs one by one into a bowl and add them to the pan to poach them.

Finally, add the vinegar and cook for another 10 minutes. Serve with a few cubes of toasted bread.
