Alentejo Yolk Dumplings

Today we’re sharing the recipe for Bolinhos de Gema Alentejanos.

INGREDIENTS:

  • 2 eggs
  • 3 yolks
  • 250 gr white sugar
  • 400 gr flour
  • 1 teaspoon baking powder
  • 125 gr lard or butter at room temperature
  • 1 lemon (zest)
  • salt to taste

PREPARATION:

Start by mixing 1 egg and the yolks with the sugar, add the lard or butter and stir until smooth.

Add the lemon zest and salt and stir.

Mix the yeast with the flour in a separate bowl and gradually add to the mixture, using your hands if necessary.

Line a baking tray with greaseproof paper, shape into balls and decorate with the handles of a pair of scissors. Distribute them on the tray, brush with the beaten egg and bake in a preheated oven at 180°C until golden brown.
