Today we’re sharing the recipe for 𝐂𝐚𝐥𝐝𝐨 𝐕𝐞𝐫𝐝𝐞.
We used Chouriço Alentejano de Porco Branco, which you can find in the Mercado Alentejano online store.
𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐞𝐬:
- 1 medium onion
- 3 cloves of garlic
- 750gr Potato
- 1/2 Alentejo White Pork Sausage
- 250gr Kale Caldo Verde
- Olive oil to taste
- 1,2lt Water
- Salt to taste
𝐏𝐫𝐞𝐩𝐚𝐫𝐚çã𝐨:
Start by roughly chopping the onion and garlic.
Cut the potatoes into cubes.
In a saucepan, add a drizzle of olive oil, the onion, garlic and chorizo and sauté over a medium heat.
When the onion is translucent, remove the chorizo and add the diced potatoes.
Season with salt, cover and cook on a very low heat for about 10 minutes.
Pour in 1.2 liters of boiling water and cook until the potatoes are tender.
When the potato is soft, blend the soup with a hand blender until the potato is broken down.
Bring it back to the boil and when it resumes boiling, add the cabbage and cook for about 8 minutes with the pan uncovered.
Serve while still hot with a few slices of chorizo.
