Encharcada Alentejana

Ingredients:

  • 20 Gems
  • 5 Whole Eggs
  • 750gr Sugar
  • Cinnamon to taste

Preparation:

Start by making a syrup with the sugar and 3 liters of water. Let it boil until it reaches the point of pearl.

While the syrup is simmering, beat the eggs with the yolks.

When the syrup is ready, pour the eggs through a sieve and continue to pour in the beaten eggs in a circular motion.

Let the stew cook. It must look like a bundle of broken eggs.

Remove the stew from the heat and pour into a deep ovenproof dish.

Sprinkle with cinnamon and bake in a hot oven until golden brown.
