Along with rabanadas, sonhos or aletria, Alentejo filhoses are a must on the Christmas table.
Alentejo filhoses are a must on the Christmas table, especially on the tables of Alentejo families.
This is a very old recipe that has been passed down from generation to generation and can be adapted for each family.
The recipe:
Ingredients:
- 1 kg unleavened flour
- 3 oranges
- 3 Eggs
- 1 glass of brandy
- 100gr melted lard
- 4 tablespoons of olive oil
- Oil to taste
- Salt to taste
- Cinnamon to taste
Preparation:
Start by putting the flour in a bowl (even better if you have a clay bowl) and make a hole in the center. Squeeze the juice of the oranges into the hole and add the eggs, salt and brandy.
Then heat the olive oil a little and pour it over the previous mixture. Knead very well until the dough doesn’t stick to your hands. Finally, put the dough in a warm place to rise.
When the dough is ready, put a little olive oil on the table and start rolling out the dough with the help of a rolling pin. Take out small portions of dough. Roll out the dough and, using a cutter, cut it into rectangles or squares and make three lines down the middle.
Then place the slice in the hot oil to fry until golden brown. Place in a bowl to drain off the excess oil, then sprinkle with the sugar and cinnamon mixture.
Let yourself be delighted by the delicious Alentejo filhoses.
