Ingredients:
For the Filhoses dough:
- 3 eggs
- 10g unsalted butter, melted
- 10g olive oil
- 1g of fine salt
- 10g of sugar
- 30g of brandy
- 20g of water
- 250g flour
- 0,5 lt of olive oil
- 50g wheat flour
For the orange syrup:
- 720g white sugar
- 100g orange juice
- 100gr of water
- 2 oranges
Preparation:
Start by preparing the syrup. First, heat 720g of sugar, 100g of water, 100g of orange juice and the zest of 1 orange. Let it boil until the sugar has dissolved and set aside.
Next, start preparing the dough for the ribbons. Using a mixer, add 3 eggs, 10g of olive oil, 30g of brandy, 20g of water, 1g of fine salt, 10g of sugar and 10g of melted unsalted butter.
Gradually start adding 250g of flour, always with the mixer running at medium speed, until you obtain a homogeneous dough.
Wrap the dough in cling film and let it rest for 2 hours in the fridge.
Using a rolling pin and a little flour, roll out the dough very thinly, to 2mm thick.
During this time, take the opportunity to heat 0,5 l of olive oil in a pan.
Then, using a knife, cut strips of dough measuring approximately 30cm wide by 3cm high.
Grab one end of the dough strip with a fork and roll it in the oil as you fry.
Turn the ribbons over to brown both sides. Remove them when they are golden brown and place them on absorbent paper.
Dip in the syrup, while still warm, and drain well. Decorate with orange zest and serve.
