Today we’re sharing a recipe for Braised Wild Boar with Coriander Rice.
𝗜𝗡𝗚𝗥𝗘𝗗𝗜𝗘𝗡𝗧𝗘𝗦:
- 1 piece of wild boar for stewing, weighing about 1 kg
- 300 g of pearl rice
- 3 large onions
- 6 cloves of garlic
- 2 bay leaves
- 500 ml of red wine
- 100ml olive oil
- Water to taste
- Salt to taste
- Black pepper to taste
- Coriander to taste
- 1 large can of black beans
𝗣𝗥𝗘𝗣𝗔𝗥𝗔ÇÃ𝗢:
Start by placing the meat in a container, if possible overnight, and season with the wine and half the crushed garlic with the peel. If you season it the same day, you should do it about 4 hours in advance.
Put the olive oil in a pan with the thickly sliced onions, the remaining sliced garlic, bay leaves, salt and pepper, to taste. Put the meat in the pot and strain the marinade and pour into the pot, adding a little water if necessary so that the piece of meat is covered. Cover and simmer.
When the meat is ready, take it out to cool a little and slice it up.
Remove a little of the cooking sauce (strain the liquid), just enough to cook the rice. Add a little coriander. Rectify the salt if necessary.
While the rice is cooking, remove some more of the cooking sauce (liquid, onion and garlic) and heat the contents of the can of beans in it.
Put the remaining sauce in a tall glass (discard the bay leaves), along with some coriander and pepper and puree with a hand blender.
Serve the meat on a platter with the rice and beans.
Heat the sauce and pour over the meat, garnish to taste.
